Baked Feta and Tomato Pasta baby!
Afternoon angels, well it’s been a hot minute. But i’m back for a brief update on this deliciously scrummy baked feta and tomato pasta- all i will say is wowowowowow! Creamy, salty, tomatoey goodness!
3 garlic cloves
1 block of feta
Pasta of your choice (i went with spaghetti)
And any other veggies you wish- this bit is totally optional but i added spinach, fresh chilli and mushrooms too- because you know- we have to hit that five a day!
Super simple steps:
- Throw some cherry tomatoes and your feta block in a baking dish, drizzle some olive oil and add 3-4 garlic cloves whole (you can add more if you like- these are going to bake up and get all caramelised and squishy- the flavour pay off is amazing)!
- Season as you like, i added pepper, chilli flakes and oregano- pop into the oven for 25-30 mins
- Boil pasta of choice (drain and hold back a cup of pasta water)- i opted for spaghetti but you can use whatever you like
- Squish all that tomato, garlic, feta goodness and add the pasta water and the pasta in- mix and serve! (I also added some mushrooms and spinach towards the end- wanted to get more of my five a day in)- but the combination was just so good!
