Kobeda for the win- homemade within 12 mins and oh so good!

Another little ramadan treat for the family and trying out all of the recipes i have banked for this month from last year. This time i attempted home made kobeda… cooked in the grill and i have to say it was pretty darned easy and will be a staple i add to my meal bank for weeks and months to come!

For the Kobeda mix ingredients, you will need the following:

1 kilo of ground beef

1 white onion grated

1tsp each of salt, pepper, chilli powder and kashmiri chilli powder (if you don’t have chilli powder or kashmiri chilli powder you can substitute cayenne and a hot paprika)

1 tbsp melted ghee

2tsps of saffron (fresh saffron diluted in hot water)

1 tsp of sumac

For the salad

1 medium red onion

Half juice of lemon

Sumac

Red onion salad

Chop your red onion and slice thinly (half moon shapes)

Soak in cold water for 5 mins

Remove and pat dry

Place into a dish, squeeze over your lemon juice and dust over one tsp of sumac- leave in the fridge until ready to eat!

Kobeda Method:

Step 1- Mix in your ground beef and grated white onion (expect some tears- you could arguably use a blender to avoid the onion tears)

Step 2- To your bowl add in your spices listed above including salt, pepper, chilli powder and kashmiri chilli powder and mix

Step 3- add in your melted ghee, for your saffron water – add your saffron into some water leave for a few mins then add into the bowl along with the sumac and mix

Step 4- Portion your mix into balls and then shape into long patties (ours were around 8 inch each- if you have skewers it’s even easier but i didn’t have any), use a wooden spoon handle to make the indents on the long patties like you find in traditional restaurants- you can also use your fingers to make the indents etc- lay on a try and refrigerate until ready to cook- at which point you would place your tray onto the and grill

Step 5- Grill on either side for 6 mins- basting with melted butter on either side

Step6- Once your kobedas are a nice golden brown (with a little char) your kebabs are ready to serve (excuse the tray below i have been using the one at my parents which has been well used but still did the job).

This is a great quick and easy recipe- highly recommend- also would suggest you serve with hummus, olives, fresh flat bread, and salad – i served mine with flatbread, red onion salad and a yoghurt and garlic dip! Easy, heart and filling.
