Good morning all, posting this quick and easy lasagna video for you all this morning, i hope you enjoy.
Ingredients
2kg ground lamb meat
1 large red onion
4 garlic cloves
(Optional- 3 spring onions we needed to use these up)
3 large tomatoes
Spices- normal version
2tsp of Dried mixed Italian herbs
1tsp salt, pepper and red chilli flakes
2tbslp good quality olive oil
25g butter
Spicier version (add 1 and 1/2tsp Cayenne Pepper) and everything else listed above
Cheese mix topping- Mix of grated mozzarella and cheddar (300g) you can add more if you want depending on your taste and preference
Lasagna sheets- i used the fresh ones most supermarkets sell these and they are fabulous and cut down your cooking time
Sauces:
(Cheats version- 1 jar Dolmio tomato lasagna sauce and 1 jar cream sauce)
Homemade sauce details if you have more time:
Tomato sauce– you will need to chop finely 1 red onion, 2 carrots, 2 celery, 8 large tomatoes (blitzed), salt, pepper and italian herbs and 2 cloves of garlic minced)- sautee it all for around 15 mins. Brown your mince separately in a good quality oil and butter mix add into the tomato sauce and cook on low 40 mins to 1 hour. You need to stir the sauce every 15-20 mins. Set to the side
Lasagna Sauce– 500 mls whole milk, 1 onion halved, 2 cloves, 1 bay leaf, 50g butter and 50g plain flour. Melt your butter, add your onion sautee for a few mins, add your flour, mix until it turns a pale brown colour, add in your milk slowly (best to have room temp milk), whisk until all the clumps disappear, add in your bay leaf and cloves leave to infuse and cook on low for 15 mins, mixing periodically). Discard of your cloves and bay leaf once your sauce is thick enough to coat the back of a wooden spoon. Set to the side.
Cook time- 40 mins to 1 hour (prep 30). Cook time is a little longer if making the sauces from scratch.
Method:
Before you start take out your lasagna sheets from the fridge and bring to room temperature, along with your grated cheese
Step 1- Sautee your red onion and spring onion in a pan with olive oil, garlic diced, and butter, add in your spices (salt, pepper, garlic, cayenne, italian herbs and red chilli flakes- set to the side
Step 2- Brown your ground lamb mince in a little olive oil, until the meat turns from red to brown (we had a large quantity so it was around 25-30 mins). Remove any water from the mince with kitchen towel. Add back in your sauce mixture and the dolmio tomato sauce (if you want to follow the tomato sauce recipe above you can). Stir this well- taste at this point and adjust to taste for salt/ spice etc.
Step 3- Start your cream sauce mix at this point if making from scratch otherwise grab your dolmio white sauce and open.
Step 4- Start to build your dishes, i like a light layer of olive oil on the base of my baking dish, then i follow the steps for my layers as follows; meat, lasagna sheets, white sauce, a little cheese, and repeat- for each of my dishes i did around 3/4 layers. On the last layer cover with lasagna sheets and add your white sauce to cover, sprinkle over your cheese mix. On top- sprinkle a little pepper or chilli flakes and place in a preheated oven at 180c for 30 mins, then a further 10 on 200c. Total cook time 40mins.
Step 5- Take out of the oven and set to the side for 10 mins- it’ll be too hot to eat straight away.
Step 7- Serve up with your accompaniments of choice (i opted for flatbread and a lovely green salad)
