Homemade filet-o-fish yes!!!!

This one is a goodie and especially when you want home cooked but are craving a cheeky burger from outside it honestly does the job and you feel good knowing exactly what has gone into your food. Delish!

Homemade tartare sauce:

1 cup mayonnaise

1/4 cup pickles (if you have dill relish that works too)

1 tablespoon lemon juice

1 tablespoon parsley, finely chopped

3/4 teaspoon sugar

1 teaspoon mustard

1 teaspoon dill

1/2 teaspoon onion powder

1/2 teaspoon red pepper flakes- add more if you like it with a little kick

1/2 teaspoon black pepper

To bread the fillets:

3/4 cup of any flour- i used plain flour

3/4 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon chili powder (again you can substitute this for cayenne or paprika whatever you prefer)

The batter mix:

2 large eggs

1/2 teaspoon salt

Breadcrumbs- you can either buy a panko version from a shop, or blend some bread into little breadcrumbs

1/2 teaspoon salt

1/2 teaspoon chili powder

1/4 teaspoon black pepper

For the main event: which will be fried in vegetables or oil

4 fillets (i used cod) but you can use any white fish fillet

4 American cheese slices/ or cheddar whatever you prefer

4 brioche buns, toasted with mayo

Other toppings are optional- lettuce etc as you like additionally i served mine with some homemade cajun fries- was definitely a people pleaser!

Method:

Step1- the sauce, you will need to combine your mayo, dill, lemon juice, parsley, sugar, mustard, onion powder, red chilli flakes, and black pepper- mix until it’s nice and thick in consistency

Step2- prepare your breading mixture salt, pepper, flour and chilli flakes set to the side

Step 3- prepare your breadcrumbs, blended breadcrumbs, salt, pepper and chilli set to the side

Step4- prepare your batter mix, whisk your egg and add your salt

Step 5- prepare your fish, for my cod fillets i patted them dry and then you assemble, dip into the egg mix, then flour mix and repeat twice, then finally dip into the breadcrumb set to the side on a tray

Step 6- get your pan on medium with vegetable oil bring that to a decent temperature and carefully place in your fish fillets they will cook 3-4 mins on either side and the trick is not to move them from one side to the next until you see that golden batter form (otherwise it will stick and break apart). The fillets are then done

I broke this one intentionally to check it was cooked and after 3-4 mins it was perfect! Turn off that gas.

Step 7: Spread that mayo on your burger bun toast it for 1 min in the same pan front and back and then you can start to assemble

I placed my burger bun down, added the tartare sauce, then my cod fillet, on the other side the cheese slice, added my lettuce ajd closed it up- i wrapped mine in some foil to help that cheese melt and meld within for 30 seconds.

Repeat that process for all of your buns- unwrap and devour, these were deliciously meaty cod fillets and my family absolutely loooved them!

I did make some cajun fries on the side and this was the perfect homemade fakeaway!

Total cook time- 30 mins from prep to plate
