Good morning all it’s the month of ramadan which means one thing, lots of meals prepared with love for all of the family to devour at once! I have been preparing a few dishes but had to share this one i found- and of course tailored to our taste but sharing the ingredients below.
This one will take 20 mins to prep, 30 mins to cook- so within 50 mins you will have a glorious little dish for all of your family to enjoy for a lunch, dinner or side dish- it’s absolutely scrumptious and i can’t wait to share this one! The crunch you get from that buttery filo is just divine!
Ingredients
-1 pack- Filo pastry (one pack store bought)- your local Waitrose/ Sainsbury’s/ Asda/ Tescos or will have some.
-2 large eggs
-300g washed baby spinach leaves
-1 leek
-3 spring onions
-Nutmeg (grate about a quarter)
-Salt and pepper 1tsp of each
-Red chilli flakes (optional) 1tsp
-Garlic and onion granules (optional) 1tsp
-Dill (a good half bunch)
-Optional either a handful of coriander or parsley
-Olive oil (2tbslp)
-3-4blocks of feta
-1 block of butter
Cooking 180c for 30 mins
Steps
- Crumble your feta blocks into one bowl and set to the side
- Chop your spinach sprinkle on some salt- leave for ten minutes, then wash all the salt off- pour into a muslin cloth and squeeze all of the excess water out (if you have a helpful dad or strong friend around get them to give it a good squeeze) set to the side in your bowl
- Chop your leek finely and your spring onion, chop your dill (optional coriander or parsley) and add to your spinach bowl and mix your leaves
- Add your two eggs into the spinach bowl along with the following spices- 1tsp of salt and pepper, grated nutmeg and I also dropped in 1tsp of red chilli flakes, and a little garlic and onion granules (1tsp of each- this is totally optional)- mix this all together- add in your drizzle of olive oil at this point and your feta- mix it until everything nicely combines
- Melt your butter 1 block
- Prepare your baking dish- add a few breadcrumbs to the bottom or a little flour powdering and line with your first three filo sheets- drape so they cover the bottom and sides and spill over the sides of the dish- drop in your melted butter across the bottom and sides.
- Add three more sheets of filo and drizzle your butter again
- Add in your spinach feta mix into the pie dish at this stage and level out in the dish- pack all of that yummy mixture in
- Cover with two sheets of filo, drizzle more butter across this; then working outwards in squish your filo sheets into what looks like ribbons and arrange from the outside of the dish in until you completely cover the pie in the centre (i’ve inserted videos for each step so you know what i mean)
- Drizzle your remaining butter over the filo, sprinkle on some black and white sesame seeds, pop into the oven for 30 mins on gas 180c and you will have the most glorious hearty pie which can be devoured in seconds!
Voila you have made a delicious crunchy light and tasty filo pie- your kitchen will smell amazing and the crunch you get from that feta is wonderful. The dill and coriander really lift and elevate this dish- honestly we all devoured!

Ps the best thing about cooking is tailoring a dish to what you want, if i was to make this again, i would also add some lemon zest and forgo the salt- feta is super salty already- small tweaks but i thought i would share! Lots of love x
